There Are Many Uses for Iceberg Lettuce

Any way you slice it, iceberg lettuce is a versatile vegetable. It’s a raft, wedge, chunk or shred of naturally crisp and juicy nutrition.

To make rafts, cut head lengthwise into slices 1-inch thick. (Refrigerate end pieces in a plastic bag for another use.) Rafts are excellent bases for sliced meats and cheeses or fresh fruit wedges.

For crisp chunks, slice head crosswise into rafts then cut rafts lengthwise and crosswise into 1-inch squares. Perfect for home salad bars and hearty tossed salads.

To make wedge, halve head lengthwise. Place cut-sides down and cut each half into halves or thirds. Drizzle with an herb-vinaigrette dressing and garnish with a sliced pimiento strip for an attractive buffet salad.

To shred, cut head lengthwise into halves, place cut-sides down on work surface and slice crosswise with thin-bladed stainless steel knife.
