Planning a graduation dinner party? Turkey Framboise is an elegant dish to serve to guests. It starts with a well-loved food, turkey, quickly sauteed in butter and then topped with raspberry liqueur for a quick, company meal.

Cream and raspberry jam are added to the skillet drippings to make a sweet sauce that gives the poultry distinction. Serve this elegant dish with fresh steamed asparagus and new potatoes.

TURKEY FRAMBOISE

4 turkey fillets, about 1 1/4 pounds

Salt, pepper

3 tablespoons butter or margarine

2 tablespoons raspberry liqueur

1/2 cup whipping cream or half and half

1 tablespoon raspberry jam

1/3 cup raspberries

Season turkey to taste with salt and pepper. Heat butter in skillet, add turkey and saute 4 minutes per side. Add raspberry liqueur and cook 2 minutes longer. Remove turkey and keep warm. Add cream and jam and cook until thickened, about 5 minutes. Add raspberries and heat through. Pour over turkey and serve. Makes 4 servings.
