Sweet Dessert Takes Shortcut : A Prepared Pound Cake Combines With Strawberries

By combining the sweet flavor of strawberries with the convenience of prepared pound cake, you’ll have a short-cut dessert to serve when time is at a premium.

Strawberry Club Sandwiches are created with triple layers of prepared pound cake, sliced strawberries and a cream cheese and walnut spread sweetened with orange juice and honey.

The sandwiches are great for summertime patio parties, pool-side brunches or an impromptu afternoon tea.

STRAWBERRY CLUB SANDWICHES

2 (3-ounce) packages cream cheese, softened

2 tablespoons frozen orange juice concentrate, thawed

1 tablespoon honey

1/3 cup chopped toasted walnuts

1 (10- to 12-ounce) prepared pound cake loaf

2 pint baskets strawberries, stemmed

1/2 cup whipping cream, whipped and lightly sweetened

Mint sprigs

Beat cream cheese, orange juice concentrate and honey in small bowl until thoroughly blended. Mix in nuts. Cut cake into 12 equal slices. Slice 1 pint berries. Spread 4 slices cake, on 1 side, with some of cheese mixture. Top with half of strawberry slices, dividing evenly.

Spread 4 more slices cake, on both sides, with more cheese mixture. Place on first 4 slices. Cover with remaining berries. Spread remaining cake slices, on 1 side, with remaining cheese mixture. Place cheese sides down on sandwiches. Cut diagonally into halves and skewer each with wood pick.

Serve sandwiches with remaining berries, halved. Dollop with whipped cream and mint sprig. Makes 4 servings.
