Kentucky Deluxe Cake Celebrates Holiday With Cranberries

“This is my family’s favorite holiday cake from Kentucky,” Mabelle Ward writes.

DELUXE HOLIDAY CAKE

2 eggs

3/4 cup oil

1 3/4 cups sugar

1 cup buttermilk

2 1/2 cups sifted flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon baking powder

1 cup whole cranberries

1 cup diced dates

1 cup chopped walnuts

1/2 cup grated orange zest

1 cup orange juice

Beat eggs well. Mix in oil, 1 cup sugar and buttermilk. Slowly stir in flour, baking soda, salt and baking powder. Fold in cranberries, dates, nuts and orange zest. Turn into greased 10-inch tube pan and bake at 350 degrees 1 hour.

Place cake on rack and cool to lukewarm. Combine orange juice and 3/4 cup sugar. Spoon over cake. Serve plain or topped with whipped cream. (Cake covered with foil will keep two to three weeks in refrigerator.) Makes 12 to 15 servings.
