Apple Butter Pound Cake is an innovative cake flavored with apple butter, cream cheese and cinnamon. Corn meal gives the cake a unique texture and delicate flavor. A light powdered sugar glaze adds a festive touch.

APPLE BUTTER POUND CAKE

1 1/2 cups granulated sugar

1/2 cup butter or margarine, softened

1 (8-ounce) package cream cheese, softened

2 eggs

2 cups flour

1 cup cornmeal

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/4 teaspoon salt

1 cup spiced apple butter

1 tablespoon whiskey, optional

1 teaspoon vanilla

1 cup chopped pecans

1 cup powdered sugar

4 to 5 teaspoons milk

1 1/2 teaspoons corn syrup

1/4 teaspoon vanilla or whiskey

Combine granulated sugar, butter and cream cheese in large mixer bowl. Beat until light and fluffy. Add eggs, 1 at time, mixing well after each addition.

Combine flour, cornmeal, baking powder, cinnamon and salt. Combine apple butter, whiskey and vanilla and add alternately with dry ingredients to sugar mixture, beating at low speed until well blended. Stir in pecans.

Spoon batter into greased 10-inch tube or 12-cup bundt pan. Spread evenly to edges. Bake at 350 degrees 60 to 70 minutes or until wood pick inserted in center comes out clean. Cool 10 minutes in pan, then remove to wire rack. Cool completely.

Meanwhile, combine powdered sugar, milk, corn syrup and vanilla. Drizzle over cooled cake. Store tightly covered. Makes 16 servings.
