Danish Bars Are Tasty, Blue-Ribbon Treats

“These Danish Bars are always a hit, and I am always being asked for the recipe,” Bruce A. Arnold writes. “It came to me from Majal Johnson, a farm neighbor of mine in Minnesota who for a time was rather like a mother to me. It always satisfies the sweet tooth and is a hit at any event where food is served. In fact, I’ve won blue ribbons with this recipe at the Kanabec County Fair in Minnesota.”

DANISH BARS

3 cups brown sugar, packed (or less to taste)

6 eggs, beaten

1/4 cup flour

1 cup chopped nuts

2 teaspoons vanilla

1/2 teaspoon baking powder

1 cup shredded coconut

1 teaspoon salt

Crust

Combine brown sugar, eggs, flour, nuts, vanilla, baking powder, coconut and salt in bowl. Mix well.

Spread onto baked Crust. Bake at 350 degrees 35 to 45 minutes. Cut into bars. Makes 8 to 10 servings.

Crust

1 cup butter, cut up

2 cups flour

Cut butter into flour until mealy. Pat into greased 13x9-inch baking pan. Bake at 350 degrees 15 minutes.
