Low-Cal Stuffed Potatoes

For a nutritious, low-calorie potato dish, try this recipe for cottage-style potatoes. Each serving has 104 calories.

TWICE-BAKED POTATOES, COTTAGE STYLE

4 medium potatoes

1 cup low-fat cottage cheese

1/2 cup nonfat milk

1 tablespoon minced onion

1/2 teaspoon salt

Dash black pepper

Paprika

2 tablespoons minced parsley

Pierce each potato in several places with tines of fork. Bake at 400 degrees 45 minutes or until tender.

Cut hot potatoes in halves lengthwise. Scoop out potato, leaving skins intact. With wire whisk, beat potato pulp with cottage cheese, milk, onion, salt and pepper until fluffy.

Pile mixture back into skins. Sprinkle with paprika and parsley. Bake 10 minutes longer or until golden. Makes 8 servings.
