FANCY STABLES: After years of delays, grading has finally begun on what must be the Cadillac of horse facilities: Creekside Equestrian Center in San Juan Capistrano. . . . The sprawling complex will house 400 horses, an animal hospital, a child-care center, a covered show arena and an equestrian library. The project, launched by Dee Dee Gates, wife of the county sheriff, overwhelms some locals. “I’ve never seen a stable like this in my 30 years of equestrian experience,” says Ilse Byrnes, a city Equestrian Commission member. “It will not, I think, be affordable housing for horses.”
