Flemish people everywhere are offended by the use of French titles to Flemish dishes as mentioned in the article “Belgian City of Ghent Is Still a Medieval Marvel,” Nov. 10. Flemish is a language of people who developed a unique culture, and as the article succinctly states, it is also a language of a people who revolted and wrested power from their oppressors--for centuries French kings who ruled the country. Every dish mentioned in the article has its own Flemish name. Carbonade flamande, by the way, is made with horse meat, not beef, as stated in the article.
