Staff Orientation: Speaking of Marriott, the demand for traditional Asian celebrations of birthdays, weddings and anniversaries has grown so much that the Irvine Marriott is going to specialize in them.

The 500-room hotel has geared up to handle eight and 10-course Oriental banquets for as many as 800 diners at a time.

“Because of the large size of the meal, Oriental events are sold by tables of 10 instead of being priced per individual,” said Patrick Cheung, the hotel’s food and beverage director. “There are few Oriental restaurants able to accommodate a party serving a traditional menu. We are able to offer space, high service standards as well as the menus they prefer, which can be prepared in either Cantonese or Sichuan style.”

The hotel serving staff has been trained in Oriental customs, such as knowing the proper timing and order of which course to serve as well.
