The Thickening Truth

You want ripe fruit for a good dessert, but ripe fruit is juicy and must be thickened. Experienced cooks usually have a favorite thickener. I’ve tested the following two; either does a fine job if used judiciously.

* Flour or Tapioca: Add 2 tablespoons to every 5 or 6 cups of fruit or berries.

* Cornstarch: Use 1 1/2 tablespoons to every 5 cups of fruit.

The procedure is the same for each: Mix the thickener thoroughly with the sugar, add the fruit or berries and gently toss all together until the sugar mixture is well distributed.
