The zest is the colored part of a citrus peel. Remove it with a grater, a vegetable peeler and sharp knife, or a zester.

A non-reactive pan is one made from metal that will not react with acidic ingredients. Non-stick, stainless steel, lined or anodized aluminum, lined copper and enameled cast iron are the most common types. Avoid unlined aluminum, cast-iron and copper pans when non-reactive cookware is specified.
