Icing on a Cake

Regarding the recipe for cheese strata (Culinary SOS, May 11): I can’t believe that you intentionally omitted the recipe for the accompanying cheese sauce. It’s the icing on the cake. I have enclosed the recipe from (one of my favorites) “The Los Angeles Times California Cookbook.”

Melt two tablespoons butter in a saucepan and stir in two tablespoons flour. Cook, stirring, until smooth paste is formed. Do not let mixture brown. Add one cup milk all at once, stirring constantly. Season to taste with salt and white pepper. Add 1 cup shredded Cheddar cheese and cook, stirring, until cheese is melted and sauce is smooth.
