Hold the Fat, Please

“Vegetarians Need Warm Meals Too.” Yes, we do, but most of us would like to live through the meal. Your Menu Planner (Dec. 7) should have been titled “A Tribute to Butter Fat” or “Requiem to My Arteries.”

There is no end to the variety of beans, legumes, grains, fruits and vegetables that can be prepared with little or no fat and no animal-derived products. I rarely cook the same thing twice. I have too many exciting new recipes to try when I’m not creating my own inventions.

A tempting, nutritious vegetarian menu absolutely need not rely on heavy fats for flavor.
