ADDENDUM : The Right Recipe

In the March 2 Food section, part of the instructions was deleted from the recipe for the cake that won the $1 million grand prize at the Pillsbury Bake-Off. The complete recipe is on H14.

MACADAMIA FUDGE TORTE

FILLING

1/3 cup low-fat sweetened condensed milk (not evaporated)

1/2 cup semisweet chocolate chips

CAKE

1 package Pillsbury Moist Supreme Devil’s Food Cake Mix (or pudding-included devil’s food cake mix)

1 1/2 teaspoons cinnamon

1/3 cup oil

1 (16-ounce) can sliced pears in light syrup, drained

2 eggs

1/3 cup chopped macadamia nuts or pecans

2 teaspoons water

SAUCE

1 (17-ounce) jar butterscotch caramel fudge ice cream topping

1/3 cup milk

Vanilla ice cream or frozen yogurt, optional

Chocolate curls, optional

This is the cake recipe as published by Pillsbury. The original was richer and moister. If you want to try the prize-winning recipe as Kurt Wait developed it, double the filling mixture.

FILLING

In small saucepan, cook condensed milk and chocolate chips over medium-low heat until chocolate is melted, stirring occasionally.

CAKE

In large bowl, combine cake mix, cinnamon and oil; blend at low speed until crumbly, 20 to 30 seconds. Puree pears in blender or food processor until smooth.

In large bowl, combine 2 1/2 cups cake mix mixture, pureed pears and eggs; beat at low speed until moistened. Beat 2 minutes at medium speed. Spread batter evenly in 9- or 10-inch springform pan that has been sprayed with nonstick coating spray. Drop filling by spoonfuls over batter. Stir nuts and water into remaining cake mix mixture. Sprinkle over filling.

Bake at 350 degrees until top springs back when touched lightly in center, 45 to 50 minutes. Cool 10 minutes. Remove sides of pan. Cool 1 1/2 hours or until completely cooled.

SAUCE

In small saucepan, warm ice cream topping and milk over medium-low heat until well blended, 3 to 4 minutes, stirring occasionally. To serve, spoon 2 tablespoons warm sauce onto each serving plate; top with wedge of torte. If desired, serve with vanilla ice cream or frozen yogurt and garnish with chocolate curls.

Makes 12 servings.

Each serving contains about:

460 calories; 490 mg sodium; 36 mg cholesterol; 16 grams fat; 73 grams carbohydrates; 5 grams protein; 3 grams fiber.
