Hwang Hae Do’s gigantic North Korean-style dumplings look something like large enchiladas bursting with vegetables, tofu, meat and herbs and seasoned with pungent kimchi. The best way to enjoy them is in the extraordinary house specialty jun gol, a peppery broth warmed on a stove at your table. A waitress then throws fresh greens and a tangle of thick, chewy handmade noodles into the bubbling pot. For a plainer dish, try the dumplings steamed, boiled or in a mild soup (listed on the Korean language menu).

Hwang Hae Do, 3208 W. 8th St., Los Angeles; (213) 383-9633. Also in Gardena, Garden Grove andCerritos. Jun gol, $11; plain mandu, $7.
