Where to find the best Belgian waffle? A magnificent mole verde? To-die-for dim sum? Times restaurant reviewers Linda Burum, Michelle Huneven, Jonathan Gold, Max Jacobson and S. Irene Virbila give their favorite platters a spin.

The Original Pancake House rises above the competition because of its specially formulated waffle batter. Made with carefully separated egg whites and yolks, Bacardi white rum and Red Star yeast, among other things, the batter is whipped until it’s thoroughly aerated, resulting in a sensuous crunch to every bite. This is a crisp, eggy Belgian waffle served golden brown, a perfect breakfast best eaten plain. Overloading it with berry toppings would be like putting ice in Champagne.

The Original Pancake House, 1418 E. Lincoln, Anaheim; (714) 535-9815. Also at 18639 Yorba Linda Blvd., Yorba Linda; (714) 693-1390. Belgian waffle, $4.
