Babcock’s Eleven Oaks Sauvignon Blanc from the Santa Ynez Valley has a classic Loire valley nose--flinty, somewhat floral with hints of citrus and melon. Its taste is crisp and focused, with a finish that’s both sweet and slightly bitter, like pink grapefruit. It’s a wine that cries out for seafood: scallops, mussels steamed in white wine and shallots, Dungeness crab and oysters on the half shell.
