The purpose of salting and draining sliced eggplant before frying is to draw out some of the moisture. Some believe this reduces the bitterness in the eggplant. It certainly gives eggplant the luxurious creamy texture that marks a good dish. Use coarse sea salt or kosher salt if you have it. It will distribute more evenly over the eggplant and be easier to rinse off.
