Until 1948, Yemen had a substantial Jewish community, now almost entirely relocated in Israel, where the cookery of the Yemenite Jews has become an important part of the Israeli culinary mix. Their version of the sauce s’hug (often spelled zhug) tends to be garlic and chiles pounded with fenugreek and other spices, rather than the tomato salsa known as saha^wig in Sana. No matter; “s’hug” (or “saha^wig,” which, believe it or not, is the plural of “s’hug”) simply means “pounded” in Arabic.
