Prickly cactus yields a sweet harvest of southwestern jams and jellies. Golden cactus and agarita jelly comes from Truly Texas, and the dark red cactus marmalade and prickly pear cactus jelly are from Cheri’s Desert Harvest in Tucson. The jellies can be used in Patricia Quintana’s Postre de Yuca recipe on H3.
