1995 Joseph Phelps Vineyards Cabernet Sauvignon (About $18)

A kinder, gentler Cabernet, rich and mouthfilling, scented with blackberries and plums, from one of Napa Valley’s benchmark producers. And yet, though this gorgeous deep garnet wine is easy to drink, it also has character and depth. In short, a beautiful wine for the price.

And one that’s very food friendly--you won’t have to kill a wild boar to tame its tannins. It will go very nicely with just about everything. (Which is not to say, however, that it is meant to accompany Chilean sea bass.)
