Caesar Came, Saw, Conquered and Left

Share

Thank you very much for reintroducing your readers to Green Goddess Salad (“In the Kitchen: A Goddess Worth Worshiping,” April 15). I had forgotten about it entirely and will use your recipe to resurrect it.

But what’s going on with Caesar salads these days? Every restaurant in town features it, and none of the offerings is the same, nor do most of them taste like Caesar salad.

Years ago when the Caesar Hotel (in Tijuana) was still in business, we used to have lunch or dinner there just to have that salad, invented by the chef. The whole presentation was done at your table.

I wish you would get on the trail of this abuse of an excellent salad misappropriated by approximately 80% of the eating places in Los Angeles. Actually, the best of a poor lot can be bought at Costco, a fairly good replica of the original, and very fresh.
