Lean Green Spuds

White Rose or Yukon Golds are good potato choices for this easy low-fat potato dish. It’s great served with any lean barbecued meats or Mexican-style dishes.

After peeling the potatoes, keep them in a bowl of cold water so they won’t turn brown while you’re preparing the rest of the dish. Spraying the potatoes with a little nonstick cooking spray or misting them with olive oil helps them brown nicely during roasting.

Creamy nonfat sour cream smooths out the tang of the tomatillo sauce. If you’re a cilantro lover, sprinkle a little chopped cilantro over the top just before serving.

POTATOES ROASTED IN TOMATILLO SAUCE

1 pound potatoes

Nonstick cooking spray

1 onion, chopped

2 tablespoons minced garlic

1 serrano chile, minced

1 pound tomatillos, husked, rinsed and chopped

2 cups low-sodium nonfat chicken broth

2 teaspoons sugar

Salt

2 teaspoons lime juice

1/2 bunch cilantro, stems removed

Olive oil, optional

1/2 cup nonfat sour cream

Peel potatoes and cut lengthwise into 6ths. Put in bowl of cold water to cover.

Spray skillet with nonstick cooking spray. Add onion and garlic and saute over medium-low heat until tender, about 5 minutes. Stir in chile and tomatillos and saute about 5 minutes. Add chicken broth, sugar and 2 teaspoons salt. Cook until tomatillos are tender, about 15 minutes.

Puree tomatillo mixture in blender until smooth. Add lime juice and cilantro leaves. Pulse until cilantro is chopped.

Drain potatoes and pat dry. Spray 3-quart baking dish with nonstick cooking spray. Arrange potatoes in single layer in bottom of dish. Lightly spray potatoes with nonstick cooking spray or lightly mist with olive oil. Season with salt.

Roast at 500 degrees until tips and edges of potatoes are browned, about 30 minutes. Pour tomatillo sauce over potatoes. Reduce oven temperature to 400 degrees and bake until potatoes are tender, 15 to 20 minutes. Spoon sour cream over in dollops and serve.
