“When I was in France a month ago, I had a very nice Bordeaux, a Cha^teau Pichon-Lalande from the mid-’80s. I think it was probably an ‘85, but maybe an ‘87; how well wine goes with food is much more important than the vintage to me. The Bordeaux was not a big powerful wine, but it was so elegant and it was so good with the rack of lamb. It was not too aggressive; it didn’t have a huge structure, but everything was together. That’s the best thing.”
