A Spot of Chicken

A whole chicken gleams with the amber color of a fine Darjeeling tea in the display case of Maxim Express, the food counter in San Gabriel Superstore. It’s the tea-flavor chicken, boiled with soy sauce and tea. We don’t know what kind of tea is used to achieve the subtle flavor, but the chicken is delicious. When you order, it is cut up Chinese restaurant-style and packed with some of the sweetened juices.
