A Rainbow Dinner

This is a really fast and satisfying meal in any weather. We love chop chae--Korean transparent noodles with meat and vegetables tossed in sesame oil--and the Asian dumplings known as gyoza or pot stickers, which are available in frozen food sections of some markets.

You can purchase the noodles at any Korean market. Fry the dumplings in 1 tablespoon of oil in a nonstick pan for about 3 minutes on each side. Let the dumplings cool off a bit before using. Figure on 5 dumplings per serving.

Given all the colors, it is really fun to present this dish. I use cobalt blue plates, start with a generous amount of salad greens, stack the transparent noodles all around and over the greens, place the pot stickers in the center and surround everything with tomato wedges and red onion slices.

We prefer a curry vinaigrette dressing (the gold hue and the bite are great), but you can you can use anything, including a squeeze of lime juice.

For variety, change the greens, add an egg or throw in some pistachio nuts and feel proud of a healthful and visually appealing meal.
