Warm-weather entertaining calls for a dish like Rafael Solorzano’s two-salmon quiche, which is a specialty of Fish King market in Glendale. The market has a cafe and take-out section, and Solorzano is executive chef. You can order a whole quiche for a party or buy it by the slice. The filling combines fresh and smoked salmon with leeks, onion, Swiss cheese, half and half and eggs. Sprigs of fresh dill on top make it look pretty.
