Emergency Linguine With Clams

I work long hours, and this recipe for linguine with clam sauce has come to the rescue more than a few times when I worked late. All the ingredients come from the cupboard, which is a bonus. It’s a staple for camping trips too. Your one stop on the way home can be for fresh bread for soaking up the delicious sauce.

Melt 1/4 cup of butter and in it cook 2 minced cloves of garlic for a couple of minutes. Whisk in 1/4 cup of flour and cook it over low heat for a minute to make a roux. Gradually add a bottle of clam juice, the juice from 2 cans of chopped clams and about 3 tablespoons of lemon juice. Stir in 1 teaspoon each of dried basil and oregano, a dash of red pepper flakes, some freshly ground black pepper and about 1/3 cup of chopped fresh parsley. Cook all of this about 5 minutes, then add the chopped clams and cook a minute more. Serve this over cooked linguine and pass the cheese.
