“I did my hoisin chicken. It’s marinated with hoisin sauce, sesame oil, Dundee orange marmalade, fresh ginger and garlic, and then you roast it. It’s good because you can start it early in the day, because it’s not a high-acid marinade, so it doesn’t break the meat down.

“I had it with roasted red potatoes and an olive oil cake from one of my old books [“The California Cook”]. There were some people over, and everybody loved it.”
