Laurita has just published “Plenty: A Collection of Sarah McLachlan’s Favorite Recipes,” with an array of starters, entrees and desserts, as well as photos of the dishes and McLachlan on the road.

“With Sarah, I’ve been cooking for her for a long time and I know her really well and know . . . how to change her mood with food,” says the Chicago-based chef. “In L.A., with so much press and so much pressure, I’d give her sushi and she’d go, ‘Oh my God, that’s just what I was thinking about.’ ”
