Zippy Polenta

Because my wife is a full-time teacher and I am a full-time pastor, we need to get meals on the table that are quick, easy and delicious. This is one we can have when there is little time to shop or prepare meals. It’s tasty and filling when a green salad is added.

Purchase a roll of cooked polenta (there are several flavors). Cut it into 1 1/2-inch-thick slices and pan-fry them. Heat a jar of salsa (adding leftover chicken or beef, if you have it). Serve the slices on plates, topped with the hot salsa, and a salad alongside. Delicious.
