Most of us think of picadillo as ground meat with raisins, olives, tomatoes, onion and other seasonings. But at La Rioja Ranch Market in Fullerton, picadillo is shredded beef in red chile sauce--guajillo chiles, the young woman behind the hot foods counter said--with some vegetables tossed in for decoration. Definitions aside, this is delicious “chili,” with a slight taste of vinegar reminiscent of chorizo.
