Egg Cream by the Numbers

You may remember those old-fashioned New York egg creams from soda fountains--a heady mixture of chocolate syrup, whole milk and seltzer water (curiously, they contain neither eggs nor cream). Now you can make them at home. The 16-ounce glass is marked with fill lines to ensure the right amount of syrup, milk and seltzer. Just add the ingredients and stir. For an authentic soda, use Fox’s U-Bet Chocolate Syrup--the recipe has remained unchanged since the first bottling. The syrup is also good over ice cream or in milk.
