Wrapped Mole

The way Guelaguetza prepares it, mole negro sauce is sweet, not spicy-hot. Mixed with chicken, it makes a very good stuffing for Oaxacan tamales wrapped in layers of banana leaves. This popular restaurant recently opened a branch on Olympic Boulevard in the middle of a cluster of Korean businesses. The advantage of the new location is a large parking lot, which makes it easy to drop by and pick up food to go.

Tamal Oaxaqueno de mole con pollo (Oaxacan tamale with chicken in black mole), $5.50, at Guelaguetza, 3014 W. Olympic Blvd., Los Angeles, (213) 427-0608, or 3337 1/2 8th St., Los Angeles, (213) 427-0601.
