At Last, a Tatin Pan

Share

With the arrival of fall, you can’t help but think of apples. Le Creuset’s new anniversary pan was created especially for tarte tatin recipes. The pan, 10 inches in diameter, is made of porcelain-coated cast iron and can be put directly on the stove top, then moved to the oven to finish cooking. The large flat handles make it easy to lift and turn.

Le Creuset anniversary pan available in red, blue and flame, $110 from Cook N’ Stuff in Torrance, (310) 371-2220, and Sur La Table stores.

Sweet and Ultra-Fine

C&H; Sugar’s Baker’s Sugar is an ultra-fine granulated pure cane sugar used by professional bakers and chefs, now available to home cooks. It’s ideal for baking because it blends faster and more evenly and melts more quickly than regular granulated sugar. Use it when making meringues and candy or frosting for cakes and cookies, any time incorporating sugar is important.
