Husky Coffee Cookies

Salpores are husky Salvadoran cookies terrific to serve with coffee. They come in three styles, one made with corn flour, another with rice flour and the third with cornstarch ( maicena )--each slightly different in shape, texture and flavor. At Panaderia El Quetzal, which specializes in Guatemalan and Salvadoran baked goods, the pale maicena salpor is sprinkled with bright pink sugar. The corn flour salpor is deep brown and slightly smaller than the golden rice flour salpor . Don’t choose between them, buy some of each. For best texture and flavor, reheat them slightly before serving.
