Article Doesn’t Tell the Full Story on Hot Dogs

Sadly, “Go Easy on the Hot Dogs” (April 8) omitted some important and relevant facts. First, using sodium nitrite to cure meats prevents the deadly food-borne illness botulism. No case of botulism has been associated with nitrite-cured meats, yet the federal Centers for Disease Control and Prevention continues to identify cases of botulism from other foods.

Consumers are wise to remember the advice of the vast majority of the nutrition and health community: There are no good foods and bad foods. Moderation is the key to good health.
