Soy-ing Seeds of Change

The answer is soybeans! The question: How to rid the country of the waste generated by grain-fed beef cattle (“There’s a Bone to Pick With Meat Eaters,” Commentary, May 27) and by dairy cows (“Developers Are Putting Southland’s Last Dairy Farmers Out to Pasture,” May 27) and at the same time relieve the misery of African farmers--misery generated by the $190-billion agriculture subsidy bill just passed (“U.S. Exports Misery to Africa With Farm Bill,” May 27).

While admittedly an acquired taste, milk from soy is nutritious. Burgers from soy are not only very tasty but moist and of fine texture. So simple, but is there a will to make it happen?
