Honey Has Quite a Pull on Bread

Share

Q: Why does a slice of bread with honey on it tend to curl up?

A: Bread is about 40% water, while honey is a very concentrated solution of sugar that strongly attracts water--scientists say it is hygroscopic. When honey is spread on bread, it pulls out water, causing the bread to shrink on that side, so the bread tries to curl up.
