Cheese and beer are a good match

I’m glad to see you acknowledged serving beer with cheese (“What Goes With Cheese? Pairings That Work”, March 26).

In fact there are many breweries that also make cheese. Fritz Maytag, the godfather of the craft brewing movement and founder of Anchor Brewing Co., grew up on cheese from the family farm. Try Maytag blue paired with Anchor beer, perhaps their seasonal Christmas beer.

While in Belgium, I enjoyed cheese made by the same Trappist monasteries that make some of the world’s greatest beer, Orval and Chimay. One cheese made by Chimay has a natural rind that is bathed in Chimay Trappist beer. Chimay cheese and Chimay beer enjoyed together is a match made in heaven (no pun intended).
