Re “A Food Fight Over a Fungus,” March 12: Quorn may represent the thin edge of the wedge of a revolution in food supply. Two of its primary ingredients, ammonia and oxygen, are obtained from air. If a synthetic substitute for corn syrup can be developed, production of cheap and plentiful protein would need very little land. Imagine New York City’s food supply being generated in a downtown skyscraper. Such a change could possibly surpass the societal switch from hunting/gathering to settled agriculture, most probably with far-reaching social consequences.
