A banneton is a cane basket that functions as a proofing (rising) bowl in the making of traditional artisan breads. Made out of tightly coiled willow, the porous baskets allow the dough to breathe while giving the loaves distinctive spiral shapes -- the floured coils leave a beautiful pattern on the surface of the breads when you unmold them just prior to baking. Traditionally used in the making of boules, or French round breads, the baskets also come in rectangles, ovals and other shapes. They last for decades if properly cared for and they’re so attractive that some restaurants and bakeries use them as serving baskets.
