Las Vegas: These chefs do all the work so you don’t have to

If cooking is not your thing, chefs in Las Vegas are working on a variety of offerings for Thanksgiving Day dinners. You can find turkey and dressing on many menus, but there are also equally tempting if offbeat offerings.

During Thanksgiving week, Border Grill at Mandalay Bay will give some Mexican flavor to an American holiday.

“Thanksgiving and all the ingredients that go along with this time of the year really fit into Latin cuisine,” said Executive Chef Mike Minor. “When mole was first invented in [the Mexican state of] Puebla, the first protein to ever be introduced to mole was turkey. So it really ties in.”

Minor has created a spread that, for appetizers, features turkey albondigas (meatball) soup ($9) and butternut squash empanadas ($10)

“Turkey albondigas is something that is an ancient recipe in Mexico,” he said. To the broth he also adds carrots, cabbage and tomatoes.

Besides squash, Minor’s holiday empanadas will include cotija cheese, shallots and roasted garlic. He tops them off with a pumpkin seed mole.

“[It is] one of the oldest moles in all of Mexico,” he said. “It’s green and [finished] with cranberries that I’ve crushed and added cilantro and fresh lime juice and jalapeños to.”

For the entree, Minor will serve up turkey enchiladas in mole colorado ($24). The special dessert is a pumpkin cheesecake tart ($8),

Next door at Luxor, an Asian take on Turkey Day is available at Rice & Co.

The restaurant is offering a “thankful dumpling” ($12) throughout November. Executive Chef Danny Chen’s creation features duck breast, cornbread stuffing, dried cranberry, onion and celery wrapped in a soy sheet and topped with crispy sweet potato, micro celery and a cranberry-yuzu sauce.

Diners can enjoy a traditional Thanksgiving feast ($19.95) at PBR Rock Bar & Grill inside the Miracle Mile Shops at Planet Hollywood. Unique milkshakes, in apple pie and pumpkin pie flavors, will be priced at $9.95.

A more adult drink -- a pumpkin cupcake cocktail -- will be offered to guests at the Hyde Bellagi nightclub. The $18 shooter blends apple Stoli with pumpkin puree and seasonal spices.
