Michael’s on Naples names new chef

Michael’s on Naples in Long Beach has hired a new chef to succeed Marco Cavuoto. Matthew Poley, who formerly worked with chef Gino Angelini at La Terza in Los Angeles, is taking the helm at the stoves.

‘Marco Cavuoto went on to new horizons,’ says a publicist for the restaurant, which was opened in December by first-time restaurateur Michael Dene. Cavuoto, from Milan, received two stars in May from Times restaurant critic S. Irene Virbila, who remarked on Cavuoto’s ‘wonderfully light hand with pastas.’

Changes on the menu are already underway. Poley graduated from Le Cordon Bleu Culinary Institute in Scottsdale, Arizona, and has worked with Michelin-two-starred Gianfranco Vissani in Civitella del Lago, Italy.
