BX: What about expanding? Have you thought about a second location?JB: Yeah. I don’t know if I’d want to impose the Golden State if we went somewhere else. I would want to see what that area needed. I think Sang [Yoon] did a really good job with that with the Culver City Father’s Office. He had a larger space and acknowledged that he could do more there. If we open Golden State 1.5 somewhere else, we could take it and make it even smaller. But I like the idea of fitting something to a space.BX: Father’s Office is very strict on the burgers. Have you had any weird, off-the-menu requests?JB: Every well-done burger that gets made here takes a piece of my soul.JS: Well-done, no bun, extra lettuce. Those sorts of things.JB: We did get well-done patty only and a side of potato salad [order] the other day. When it came out, there was no way to dress this up to make it look like I want to eat it. The woman seemed happy, but there was no way to plate that.
