A Variation on the Chef’s Best Friend

Casseroles can be a cook’s best friend when the goal is a meal that’s satisfying, yet easy. Fortunately, the possible combinations for these oven entrees are almost limitless. Just when you think you’ve tried them all, along comes another intriguing variation such as Knackwurst and Potatoes Au Gratin.

KNACKWURST AND

POTATOES AU GRATIN

1 (1-pound) package knackwurst

2 (12-ounce) packages frozen shredded hash brown potatoes

1/4 cup chopped green pepper

2 tablespoons chopped pimiento

2/3 cup shredded sharp Cheddar cheese

1 1/2 cups milk

1 teaspoon salt

Cut knackwurst diagonally into thirds. Partially defrost shredded hash brown potatoes in 2-quart greased baking dish. Add green pepper, pimiento and 1/3 cup cheese. Mix lightly with fork.

Combine milk and salt. Pour over potatoes and bake at 375 degrees 40 minutes. Place knackwurst on top of potatoes, sprinkle with remaining 1/3 cup cheese and continue baking 15 minutes. Makes 4 to 5 servings.
