Coconut Cookies With Jelly in Center

“This is a recipe that my grandmother in Canada used to make,” Marilyn O’Byrnes writes. “It was my job then to put in the jelly.”

BEST JELLY COCONUT COOKIES

1 egg, separated

1 cup flour

1/2 cup brown sugar, packed

1/2 cup butter or margarine, softened

Shredded coconut

Beat egg white lightly with fork in small bowl. Combine flour and brown sugar. Cut in butter. Mix in egg yolk. Gather dough and knead into ball. Pinch off small pieces and shape into small (about 1 inch) balls.

Dip each cookie ball into egg white then roll in coconut. Place on baking sheet, about 2 inches apart. Indent center with spoon, then bake at 350 degrees 5 minutes. Remove, then place small amount of grape jelly in center. Return to oven and bake about 5 to 10 minutes longer or until cookies are golden brown. Makes about 1 1/2 dozen.
