Cookies That Sweeten the Holidays

“With the holidays approaching fast I thought it a good time to share this great recipe for Sugar Cookies,” Judy Suszczynski writes. “I received the recipe, as many of my favorites, from a mother who attends a Mommy and Me preschool class with my daughter and me. I have a weakness for Sugar Cookies, and these are my favorite. If desired, they may be rolled out on a very well-floured board.”

SUGAR COOKIES

1 cup butter or margarine

1 cup granulated sugar

1 cup powdered sugar

1 cup oil

2 eggs

4 1/2 cups flour

1 teaspoon cream of tartar

1 teaspoon baking soda

1 teaspoon vanilla

1/2 teaspoon almond extract

Cream butter and sugars in large bowl until light and fluffy. Beat in oil and eggs. Beat well. Add flour, cream of tartar, baking soda, vanilla and almond extract.

Chill dough and drop by teaspoons onto baking sheets. Or roll in balls and flatten with glass dipped in granulated sugar.

Bake at 350 degrees about 9 to 12 minutes or until lightly browned. Makes about 6 dozen.

Note: Longer the dough is chilled, the longer the baking time.
