Easy, Tasty Side Dish for Fish, Meat or Fowl

Herb Cheese Pudding is an easy side dish accompaniment to fish, meat or fowl. Preparation may be done ahead, and the dish refrigerated until baking time.

Torn pieces of whole-wheat bread are covered with a mixture of Jack cheese, sliced leeks, milk and eggs. After standing at least a few minutes to allow the aromatic herbs to permeate the bread and leeks, the pudding is baked for 50 minutes.

HERB CHEESE PUDDING

5 slices whole-wheat bread

1/2 pound Jack cheese, shredded

4 leeks, sliced

2 teaspoons chopped thyme leaves

2 teaspoons chopped marjoram leaves

1 clove garlic, minced

2 cups milk

4 eggs

Salt, pepper

Tear bread into pieces and place in greased 11x9-inch baking dish. Combine cheese, leeks, thyme, marjoram and garlic.

Whisk together milk, eggs and salt and pepper to taste. Stir in cheese mixture. Pour over bread and let stand 20 minutes.

Bake at 300 degrees 50 minutes. Makes 6 to 8 servings.

Note: 1 teaspoon crushed thyme and marjoram may be substituted for fresh herbs.
